Spicy Tofu & Avocado Sushi Burrito

1 cup cooked sushi rice

2 full sheets of nori

1 ripe avocado, thinly sliced

1 small cucumber, cut into matchsticks or thin strips

1/2 cup carrots, cut into matchsticks or thin strips

1/2 cup red bell pepper, thinly sliced

1/2 cup crispy tofu – lightly pan fried

3-4 tablespoons Delicio Sriracha Mayo

Step 1: Cook a cup of sushi rice

Step 2: Pan fry 1/2 a cup of tofu

Step 3: Lay one sheet of nori flat on a clean, dry surface

Step 4: Lightly moisten your hands with water (this prevents rice from sticking). Take about 1/2 of the seasoned sushi rice and spread it evenly over the nori sheet

Step 5: Arrange your prepared tofu strips, avocado slices, cucumber, carrots, bell pepper

Step 6: Drizzle Sriracha Mayo: Drizzle a generous amount of Sriracha Mayo in a line across the middle of the rice, running lengthwise

Step 7: Roll the nori sheet in a tight burrito

Step 8: Let the rolled sushi burrito sit for a minute or two, seam-side down, to help it set.

For serving, use a very sharp, moistened knife to slice the burrito in half diagonally .
