Mango Chicken Salad Cups

1 tbsp caramel syrup

1 tbsp lemon juice

1 cup boiled chicken, cut in cubes

1 medium mango – peeled, diced

1 tbsp avocado, chopped

2 halves of capsicum (to be used as cups)

Mint leaves for garnish

1 tbsp Delicio Habanero Ranch

Salt to taste

Step 1: In a bowl, mix the caramel syrup, lemon juice and Delicio Habanero Ranch. Set the mix aside

Step 2: In a large bowl, toss together the chicken, mangoes and avocados

Step 3: Arrange the capsicum cups on the serving dish, then top it with a few spoonfuls of the chicken mixture

Step 4: Pour sauce mix on top of the salad. Garnish with mint leaves
