Creamy Dill & Chickpea Salad Lettuce Wraps

1 can (15 ounces) chickpeas, rinsed and drained

1/2 cup chopped cucumber

1/4 cup finely diced celery

2 tablespoons fresh dill, finely chopped

1/2 cup corn Kernels

1/2 cup Light Ranch dressing

1 large head of lettuce (such as butter, romaine, or iceberg), leaves separated and washed

Salt and Black pepper to taste

Step 1:  In a medium-sized bowl, add the rinsed and drained chickpeas. Use a fork or potato masher to lightly mash about half of the chickpeas. This will create a creamy texture while still leaving some whole for substance.

Step 2: Add the finely diced cucumber, celery, corn and chopped fresh dill to the bowl with the mashed chickpeas

Step 3: Pour in the Delicio Light Ranch dressing.

Step 4: Stir everything together until well combined. Season generously with salt and black pepper to taste. Taste and adjust seasonings as needed.

Step 5: Arrange the separated lettuce leaves on a platter. Spoon a generous amount of the chickpea salad into the center of each lettuce leaf.

Step 6: Serve immediately, allowing everyone to fold their own lettuce wraps.
