Crispy Potato, Corn & Bean Salad Pockets

1 medium potato, cut in 1 inch cubes

½ cup boiled, canned kidney beans

½ cup boiled corns

½ cup chopped tomatoes

½ cup cucumbers

1 tsp crushed black pepper

Handful of chopped cilantro

Olive oil for spraying

Oregano

3 bread slices for filling

Delicio Light French (drizzle)

Salt to taste

Step 1: Arrange potatoes in the air fryer and spray olive oil over it. Deep fry / air fry for 10 to 12 minutes until brown and crisp

Step 2: Mix all the veggies and the seasonings along with Light French

Step 3: Hold the adjacent corners of bread with a toothpick to look like a pocket. Then, toast it in the oven for a minute until slightly brown and crisp

Step 4: Add the salad in the bread pockets. Top it with crispy potato cubes, cilantro and a little more Delicio Light French over the potatoes
